Add cholia paste, sugar, ghee and milk to prepare the tasty Cholia halwa. Sprinkle the cardamom powder over the hala and enjoy as desset or a sweet healthy snack.
Cholia Halwa recipe - How to make Cholia Halwa

150 gms pure ghee
1/2 kg hara chana (green chick peas), coarsely ground
300 gms sugar
1/2 ltr milk
1/2 tsp cardamom (elaichi) powder
To Finish
2 tbsp mixed nuts
2 tbsp fresh cream
1 tbsp crubled mava (khoya)
For Thandai
10 green cardamoms (elaichi), seeds only
1 1/2 tsp fennel seeds (saunf)
1/2 tsp black peppercorns (kalimirch)
1/2 tsp coriander (dhania) seeds
1 tsp melon seeds (charmagaz) or sunflower seeds (surajmukhi ke beej)
50 gms peeled almonds (badam)
5 tbsp sugar
3 tbsp rose petals
2 tbsp rose water
750 ml milk
Method
- Heat ghee in a pan and add cholia paste.
- Stir over a gentle flame until mixture reduces and ghee separates.
- Add sugar, milk and cardamom to the pan.
- Simmer till liquid evaporates.
- Serve decorated with dried fruit, cream and khoya.
- For thandai, roast spices lightly on a tawa. soak all ingredients except milk in enough water to cover.
- Set aside for two hours. grind into a paste.
- Mix with milk.
- Strain liquid through muslin.
- Decorate with rose petals and serve chilled.
