Corn and egg bhurjee is an innovative way of cooking scrambled eggs and corn with onion, tomato, ginger, chillies and garam masala. The tasty corn egg bhurji tastes awesome with rotis or naan.

1 cup corn (makai ke dane)
3 beaten eggs
salt and black pepper (kalimirch) powder to taste
1 chopped onion
2 chopped tomatoes
1 tbsp chopped coriander (dhania) leaves
1/2 tbsp chilli powder
1/2 tsp garam masala powder
2 tbsp oil
Method
- Heat oil in a pan;
- Sauté the onions and the tomatoes for 2-3 mins.
- add in the spices and salt to taste, mix well.
- Add in the corn and cook it for few mins.
- Add in the beaten eggs finally and cook on a slow flame for 3 mins.
- remove and serve hot,
- Garnish with chopped coriander leaves.
- serve with bread and buns.
