Cauliflower in coconut milk boasts of overwhelming flavors and a great taste. An Indian vegetable preparation, cauliflowers are stir fried with Garam masala and simmered in coconut milk in this Gobhi mutter masala recipe.

1 big sized cauliflower, cut into medium sized florets
2 big sized potatoes, chopped
1/4 tsp nigella seeds (kalonji) (optional)
2 cardamoms (elaichi)
2 sticks cinnamom
3 to 4 cloves (laung / lavang)
1/2 tsp cumin seeds (jeera)
1/2 tsp mustard seeds ( rai / sarson)
10 to 15 curry leaves (kadi patta)
3 to 4 cups coconut milk
1/2 tsp chilli powder
1 tsp turmeric powder (haldi)
1 tsp cumin seeds (jeera) powder
1 tsp garam masala powder
1 tbsp ginger-garlic (adrak-lehsun) paste
salt to taste
1/2 cup ghee or oil
FOR GREEN PASTE:(grind them to paste)
1 cup mint leaves (phudina)
1/2 cup coriander (dhania) leaves
2 to 3 green chillies
FOR GRAVY: (grind them to thin paste)
1 large sized onion
1/2 cup grated coconut
2 cardamoms (elaichi)
2 bayleaves (tejpatta)

- Heat ghee in a heavy bottom vessel, add cardamoms, cloves, onion seeds, cumin, mustard seeds, cinnamom sticks,curry leaves stir for a few seconds.

- Add onion coconut paste, stir and cook for 5 minutes till oil seperates.
- Add ginger garlic paste, add the cauliflower and mix well and cook for 5 to 7 minutes stiring occasinally till they are half tender
- Add a cup of coconut milk, turmeric powder, chilly powder, jeera powder, salt according to taste, add potatoes and green paste.

- Cook for 5 minutes stiring occasinally and add the remaining coconut milk
- Add garam masala, mix well,close the lid and cook till the cauliflower and potatoes are tender and cooked.
