Cutlets are very famous and popular snack all over the world, but deep fried cutlets contains high calories, here is healthier version of Veg cutlet which is baked one and prepared without using a sinnle drop of oil.

Crunchy Veg Cutlet recipe - How to make Crunchy Veg Cutlet

Preparation Time:    Cooking Time:    Total Time:    Makes 4 cutlets

Ingredients

1/3 cup finely chopped carrots
1/4 cup diced capsicum
2 tbsp green peas
1 boiled potato , peeled and mashed
1 slit green chilli , finely chopped
1/2 cup finely chopped spinach (palak)
1/4 tsp garam masala
1/2 tsp chilli powder
1/2 tsp coriander-cumin seeds (dhania-jeera) powder
1/4 tsp dried fenugreek leaves (kasuri methi)
1/2 tsp chaat masala
salt to taste
2 tbsp cornflour
4 tbsp crushed cornflake for coating

    Method
  1. Place the carrots in a microwave safe bowl, sprinkle little water, cover and microwave on high for 3 to 4 minutes, stirrin once in between.
  2. Add the capsicum, green peas ,sprinkle little water and again cover and microwave on high for 2 to 3 minutes or until veggies are completely cooked.
  3. Remove from microwave and mash them lightly.
  4. Add the potatoes, spinach, garam masala, chilli powder, coriander-cumin seeds powder, kasoori methi,chaat masala ,green chillies and cornflour and mix well.
  5. Now divide the mixture in 4 equal portions and shape them into small round flat cutlets..
  6. Roll each cutlet in cornflakes and arrange them up in baking tray.
  7. Bake the patties in preheated oven at 200 degree celcious for 15 to 20 minutes.
  8. Turn upside down the patties and again bake for 15-20 minutes
  9. Serve hot.
