Cottage Cheese Cutlets

This is not really a barbeque recipe but I like the way the cottage cheese melts lightly when grilled just before you serve them. It's also a substantial dish to add to a barbeque menu. Serve them with burger buns to make veggie burgers.
Cottage Cheese Cutlets recipe - How to make Cottage Cheese Cutlets

Makes 4 cutlets.
1 cup boiled and mashed potatoes
1 cup grated paneer (cottage cheese)
2 tbsp chopped coriander (dhania)
4 to 6 green chillies, chopped
1/2 cup chopped onions
1 cup cabbage, finely chopped
3 bread slices
salt to taste
Other ingredients
1 cup plain flour (maida)
bread crumbs
oil for deep-frying
Method
- Main Procedure
- Soak the bread slices in water for 2 minutes and then squeeze out the water.
- Combine the potatoes, cheese, coriander, chillies, onions, cabbage, bread slices and salt and mix well.
- Shape into 4 cutlets.
- Mix the flour in 1 cup of water to make a smooth batter. Dip the cutlets in
- Deep fry in oil, drain on absorbent paper and keep aside.
- Just before you wish to serve, grill them over a charcoal or electric barbeque.
- Serve hot with the barbeque sauce.

If i make potato cutlet previous day and put in fridge becomes soft. How i can i avoid this. Also would paneer cutlet be better if i make it previous day?
