Fairy Pudding recipe - How to make Fairy Pudding

Preparation Time:    Cooking Time:    Total Time:    Makes 3 to 4 pudding mould

Ingredients

300 ml water
60 gms sugar
1/2 tsp lemon rind
1 egg white
15 gms cornflour

Method
    Method
  1. Boil the water with the grated lemon or lime rind and sugar.
  2. Blend the cornflour with the lemon juice.
  3. Strain sugar solution on to blended corn four.
  4. Return to pan and boil for 6 to 8 minutes.
  5. Whip the white of egg stiffly and pour into the mixture when it has cooled slightly.
  6. Pour into wet moulds and turn out when set.
  7. Serve with custard sauce.
