Gaajar ni is a savory vegetable preparation made from grated carrots. A quick and simple dry veg recipe, the carrots or gajar are seasoned with chillies, spices and hing and then enjoyed with rotis.

Ingredients


2 to 3 big sized or 5 to 6 smal sized carrots
1 green capsicum, chopped
1 tsp oil
1/2 tsp mustard seeds ( rai / sarson)
a pinch of asafoetida (hing)
1 tbsp sugar
1 to 2 green chillies , depending on taste
1 1/2 tsp lemon juice
salt to taste
chopped coriander (dhania) for garnishing

Method

  1. Wash, peel & grate the carrots.
  2. Apply little salt to it & keep it aside.
  3. In a pan, take 1 tsp oil, add rai & add hing once it start cracking.
  4. Add chopped green chillies & capsicum & cook for one-two min. on high flame.
  5. Add grated carrots after pressing well with hands to remove extra water.
  6. Mix well & add sugar & lime juice. add salt to taste if less.
  7. Garnish it with corriander.
