Baby potatoes are a perfect match for greens and herbs, as its neutral flavour and soft texture combines well with such ingredients.
Here too, you will find that the baby potatoes and spinach make a wonderful team, which becomes a super-duper hit when mixed with a tangy dressing of garlic, lemon juice, curds and other spicy ingredients.

For The Garlic Dressing
1 tbsp finely chopped garlic (lehsun)
1 tsp lemon juice
2 tbsp curds (dahi)
1 tsp milk powder
1/2 tsp mustard (rai / sarson) powder
salt and freshly ground black pepper (kalimirch) to taste
Other Ingredients
2 cups boiled baby potatoes (with the skin) , cut into halves
1 cup shredded spinach (palak)
salt to taste

- Combine all the ingredients in a bowl and mix well. Refrigerate for at least 30 minutes.

- Combine the spinach and the baby potatoes, in a deep bowl and mix gently.
- Add the prepared dressing and toss gently.
