Ah, perhaps it is the tempering in ghee that makes grated purple yam with roasted peanuts so irresistible, or the crunchily crushed roasted peanuts. Whatever the reason, the fact is that this is a real masterpiece that will delight the desi palate. Make sure you cook it till it is brown on both sides, and serve hot and fresh to retain the texture.

Makes 4 servings
3 cups peeled , steamed and grated purple yam (kand)
2 tsp ghee
1 tsp cumin seeds (jeera)
2 tsp finely chopped green chillies
1/4 cup roasted and crushed peanuts
a pinch of sugar
salt to taste

- Method
- Heat the ghee in a pan and add the cumin seeds.
- When the seeds crackle, add the green chillies and sauté for 20 seconds.
- Add the yam, peanuts, sugar and salt, mix well and cover and cook on a medium flame for 8 to 10 minutes till both sides are brown in colour.
- Serve hot.
