Hariyali Sandwich is a filling evening snack made using whole wheat bread and green spinach sauce and methi tikki.

Hariyali Sandwich recipe - How to make Hariyali Sandwich

Preparation Time:    Cooking Time:    Total Time:    Makes 2 serving

Ingredients

4 whole wheat bread slices
2 tomato slices
2 sliced onions

For The Tikkis
1 cup chopped fenugreek (methi) leaves
1/2 cup chopped coriander (dhania)
2 boiled and mashed potatoes
6 green chillies
3 tbsp butter
salt to taste
2 tsp mango powder
1 tbsp red chilli powder
3 tbsp corn flour
3 tbsp bread crumbs

For Green Cheese Sauce
1/2 cup mayonnaise mixed with cheese
1/4 cup spinach (palak) puree

Method
For the tikkis

  1. Combine methi leaves, salt, red chiili powder, mango powder, coriander and mashed potato, mix well.
  2. Add little corn flour, mix well. Divide into 4 portions and shape each portion into a round tikki.
  3. Roll over bread crumbs and sallow fry the tikkis.

For green cheese sauce

  1. Combine spinach puree and mayonaisse-cheese and mix well.
  2. Spread some butter on the bread slices and toast them on a tava.
  3. Now spread some prepared green cheese. Place a slice of tomato over it, then a tikki and again spread some green cheese over it.
  4. Top it with a spinach leaf and serve immediately with tomato ketchup.
