Healthy Carrot Rice recipe - How to make Healthy Carrot Rice

Makes 4 serving
grated carrot
3 cups cooked rice (chawal)
1/2 cup peanuts
1 chopped onion
21/2 sambar powder
1 tsp finely chopped garlic (lehsun)
2 pinches turmeric powder (haldi)
1 tsp coriander (dhania) seeds powder
For The Tempering
1/2 tsp mustard seeds ( rai / sarson)
1 tsp urad dal (split black lentils)
1/2 tsp chana dal (split bengal gram)
10 curry leaves (kadi patta)
2 tsp sesame (til) oil
salt to taste
chopped coriander (dhania) leaves for garnishing
Method
- Method
- Heat oil in a heavy bottomed pan
- When the oil is hot, temper with mustard seeds followed by urad dal, chana dal and curry leaves.
- Add in the peanuts and roast it.
- Add the chopped onion and minced garlic and sauté it till the onion turns pink in color.
- Add in the grated carrot and mix well.
- Add sambhar powder, turmeric powder, coriander powder and salt. Mix everything well.
- Cover the pan and cook till the carrots are cooked.
- To the above mixture, add in the cooked rice and mix gently.
- Garnish with coriander leaves and serve.
