Indian Pesto Pasta

Pesto gives pasta a butter mature flavour. Tradtionally pesto is made using olive oil, basil, pine nuts, parmesan cheese and seasonings. In a simple indian way we can make it using following ingredients and get a good buttery mature flavour as well.

Makes 6 to 7 servings
2 cups cooked elbow pasta
1 tbsp butter
1/2 cup finely chopped onions
2 tsp finely chopped garlic (lehsun)
1/4 cup chopped yellowand red capsicum
salt and freshly ground black pepper powder to taste
1/4 cup grated mozzrella cheese
To Be Mixed Together For The Pesto
1/2 cup roasted and powdered peanuts
1/2 cup chopped coriander (dhania)
1/2 cup rice (chawal) bran
1/4 cup grated processed cheese
salt and freshly ground black pepper powder to taste
For Garnish
1/4 cup grated processed cheese

- Method
- Heat the butter in a pan, add the garlic, onions and capsicum and saute for 4 minutes.
- Add the prepared pesto, pasta cheese and seasonings and mix well.
- Serve hot.
