Limbu mari sev is a tangy and spicy evening snack recipe with the gram flour or besan based sev deep fried and then enjoyed with a tinge of lime juice and spice powders.

500 gms besan (Bengal gram flour)
3 tbsp black pepper (kalimirch) powder
1/2 cup lemon juice
salt to taste
a pinch asafoetida (hing)
a pinch of baking soda (optional)
oil for deep-frying
Method
- Dissolve soda bicarb in one cup water.
- Mix all the ingredients well and bind to a smooth dough using the soda bicarb water.
- Put a handful of the dough into the sev mould and press sev directly into the hot oil in the kadai.
- Fry till done and crisp on both sides. this sev is a special treat when served with pnk.
