For Meethe Chawal
1 1/2 cups long grain rice (basmati chawal)
4 tbsp ghee
3 cloves (laung / lavang)
4 black peppercorns (kalimirch)
50 mm stick cinnamon (dalchini)
4 cardamoms (elaichi)
2 tbsp sliced almonds (badam)
2 tbsp cashew nut (kaju) halves
1 tbsp raisins (kismis)
8 to 10 sliced fresh coconut
1 1/2 cups sugar
a few saffron (kesar) strands
1/4 tsp oranges food colour
2 cups water
a pinch of salt
For meethe chawal
- For meethe chawal
- To make {span class="bold1"}meethe chawal{/span}, clean, wash and soak the basmati rice in enough water for 30 minutes. Drain well and keep aside.
- Heat ghee in a pressure cooker, add cloves, black peppercorns, cinnamon, cardamoms, almonds, cashew nuts, raisins and coconut slices.
- Sauté on slow flame for a minute, while stirring occasionally.
- Add soaked rice, sugar, saffron, orange food colour and 2 cups of water.
- Mix well and pressure cook for 3 whistles.
- Allow the steam to escape before opening the lid.
- Serve {span class="bold1"}meethe chawal{/span} hot.

To make meethe chawal, take 1½ cups of long grain rice (basmati chawal) in a deep bowl.
