  1. To make {span class="bold1"}meethe chawal{/span}, clean, wash and soak the basmati rice in enough water for 30 minutes. Drain well and keep aside.
  2. Heat ghee in a pressure cooker, add cloves, black peppercorns, cinnamon, cardamoms, almonds, cashew nuts, raisins and coconut slices.
  3. Sauté on slow flame for a minute, while stirring occasionally.
  4. Add soaked rice, sugar, saffron, orange food colour and 2 cups of water.
  5. Mix well and pressure cook for 3 whistles.
  6. Allow the steam to escape before opening the lid.
  7. Serve {span class="bold1"}meethe chawal{/span} hot.

  1. To make meethe chawal, take 1½ cups of long grain rice (basmati chawal) in a deep bowl.
  2. Clean, wash and soak in enough water for 30 minutes.
  3. Drain well and keep aside.
  4. Heat 4 tbsp ghee in a pressure cooker.
  5. Add 3 cloves (laung / lavang).
  6. Add 4 black peppercorns (kalimirch).
  7. Add 2 inch cinnamon (dalchini).
  8. Add 4 cardamoms.
  9. Add 2 tbsp sliced almonds (badam).
  10. Add 2 tbsp cashew nut (kaju) halves.
  11. Add 1 tbsp raisins (kismis).
  12. Add 8 to 10 sliced fresh coconut.
  13. Sauté on slow flame for a minute, while stirring occasionally.
  14. Add the soaked rice.
  15. Add 1½ cups sugar.
  16. Add a few saffron strands.
  17. Add ¼ tsp orange food colour.
  18. Add 2 cups of water.
  19. Add a pinch of salt.
  20. Mix well and pressure cook for 3 whistles.   
  21. Allow the steam to escape before opening the lid.
  22. Serve meethe chawal hot.
