Methi Puris recipe - How to make Methi Puris

Preparation Time:    Cooking Time:    Total Time:    Makes 4 to 6 servings

Ingredients

2 tbsp oil
1 tsp cumin seeds (jeera)
2 cups of chopped fenugreek (methi) leaves
2 tbsp chilli powder
salt to taste
1 tsp sugar
1 cup plain flour (maida)
1 cup semolina (rava)
oil for frying

    Method
  1. Heat the oil in a pan, add the cumin seeds and saute for 30 seconds.
  2. Add the fenugreek leaves and mix well and close the pan with a lid. Allow the methi to cook for 5 minutes.
  3. Add the salt, sugar and chilli powder and mix well.
  4. Remove from the flame and allow to cool at room temperature.
  5. Add the plain flour and semolina and mix well. Add little water if required and knead into a dough.
  6. Divide the dough into equal portions and roll out each portion into a small puris.
  7. Heat the oil in kadhai and deep fry the puris, few at a time till golden brown in colour. Drain on absorbent paper.
  8. Serve hot phudina or coconut chutney.
