A simple and tasty microwave recipe - methi paneer with the paneer cubes cooked with chopped methi or fenugreek leaves, onions, tomatoes and select spice powders. A dry vegetable recipe, methi paneer is best relished with parathas.

250 gms fenugreek (methi) leaves leaves pureed
1 cup tomato puree
1 tbsp mustard (rai / sarson) oil
2 whole dry kashmiri red chillies
salt to taste
1 tsp garam masala
1 tbsp coriander (dhania) powder
300 gms paneer (cottagte cheese) cubes

- Method
- Put the oil and whole red chillies in a microwave safe bowl and microwave on high for 2 minutes.
- Add the fenugreek puree, tomato puree, salt, sugar, garam masala and coriander powder, mix well and cover and microwave on high for 10 minutes, stirring once.
- Add the paneer and microwave at 70% for 8 minutes.
- Serve hot.
