A tasty and healthy sandwich made with a filling of tofu and mint with other spices. A good breakfast or tea time snack.
Minty Tofu Sandwich recipe - How to make Minty Tofu Sandwich

100 gms tofu (bean curd/ soya paneer)
1 medium sized tomato, chopped
3 tbsp Green Chutney
salt to taste
6 slices of bread
1 tsp olive oil
1 tsp oil
Method
- Take the tofu and place it in a mirowave safe dish and cook on high for 1 min.mash the tofu and add the green chutney to this and mix.
- Heat olive oil in a nonstick pan,add the chopped tomato,saute for 2 min.
- Now add the tofu mixture and salt,mix for 2 min.
- Take a slice of bread place a spoonfull and spread it,place another slice and repeat to make 2 sandwiches
