A quickly made nutritious recipe using vegetables. You can cook the vegetables either in microwave, pressure cooker or pan, till tender, without making them mushy.

Makes 3 to 4 servings
To Be Grounded Into A Paste
1 roughly chopped onions
3 medium sized roughly chopped tomatoes
2 green chillies
1" ginger (adrak)
2 tsp coriander (dhania) seeds
1 tsp cumin seeds (jeera)
1/2 tsp fennel seeds (saunf)
2 cardamoms
1 cinnamon (dalchini)
1 star anise (chakri phool)
1/2 tsp black peppercorns (kalimirch)
1 dry red chilli
2 tbsp grated coconut
1/2 cup water
Other Ingredients
1 tbsp oil
2 1/2 cups boiled mixed vegetables (carrots , french beans ,
green peas , potatoes , cauliflower)
salt to taste
For The Garnish
1 tbsp chopped coriander (dhania)
Method
- Method
- Heat the oil in a non-stick pan, add the grounded paste and cook till the oil leaves the masala.
- Add the vegetables and the salt and cook on a medium flame for 2 to 3 minutes.
- Serve hot garnished with coriander.
