An exciting and delicious combination of coconut (nariyal) and plain white rice (called Chawal) in the easy and flavorsome nariyal chawal recipe. A great way to add flavour and taste to leftover rice by stir frying it with coconut and tempering the nariyal chawal with mustard seeds and chillies.

200 gms grated coconut
1 cup rice (chawal)
2 cups water
1 tsp cumin seeds (jeera)
2 tbsp oil
few chopped cashewnuts (kaju)
few raisins (kismis)
salt to taste
Method
- Heat oil in a pressure-cooker and fry cumin seeds.
- Add coconut and fry till light brown. add rice and fry for a minute.
- Add salt, cashewnuts and water and pressure-cook for 1-2 minutes.
- Transfer into a serving dish, garnish with raisins and serve.
