Pressure cooked hard durum wheat pasta like penne pasta, spaghetti, butterfly pasta are more fluffier, tender and hence easy to digest and also saves time and fuel.

Ingredients


For The Pasta
3 cups penne
5 to 6 cups water
salt to taste
1/2 tsp oil

Other Ingredients
2 tsp oil
1 tbsp green garlic (lehsun) chopped
1/2 cup onions chopped
1/2 cup chopped tomatoes
1/2 cup tomato puree
1/2 cup chopped capsicum
1/2 cup grated processed cheese
salt to taste
freshly ground black pepper (kalimirch) powder to taste
2 tbsp chopped pineapple , sweetened
1/4 tsp nutmeg (jaiphal)
1/4 cup small paneer (cottagte cheese) cubes

For The Garnish
1/2 cup spring onions white and green , finely chopped
2 tbsp roasted almonds (badam) , sliced
1/4 cup grated processed cheese

To Serve
fresh sweet lime (mosambi) juice

    Method
  1. In a pressure cooker add the pasta, water, salt and oil and pressure cook for 3 whistles.
  2. Allow the steam to escape before opening the lid.Drain and keep aside.
  3. Heat oil in a pan and saute garlic, onion, tomatoes and capsicum. Season with salt, pepper and nutmeg. Add cheese, pineapple, paneer cubes and the pressure cooked pasta and mix lightly.
  4. Garnish with spring onions, almonds and cheese and serve hot with fresh fruit juice.
