Pasta with cheese and herbs are a mouthwatering combination of boiled and drained pasta topped with grated cheese and herbs and then baked till cheese melts. The pasta and cheese dish makes for a perfect cheesy snack item.

450 gms fussilli
1/4 cup olive oil
3 cloves of garlic (lehsun), crushed
2 tsp very finely chopped green chillies
1 cup chopped fresh parsley leaves and 1/2 cup fresh chopped basil
1/2 cup chopped fresh oregano
salt and pepper to taste
150 gms ricotta cheese, cut into cubes
Method
- Add pasta to a large pan of rapidly boiling water and cook until just tender. drain and return to the pan. when pasta is almost cooked, heat oil in a non stick heavy based frying pan.
- Add garlic and chilly to pan and saute for one minute over low heat.
- Add oil mixture, herbs, salt and pepper to pasta. toss well until the mixture coats pasta thoroughly.
- Add cubes of ricotta cheese and serve immediately.
