Pear, apples and rocket leaves salad is an exotic one, which combines pears and apples with rocket leaves. The fruits are used unpeeled, adding to the visual appeal as well as health quotient. Makes 4 servings
1 cup thinly sliced pears (unpeeled)
1 cup thinly sliced apples (unpeeled)
1 cup arugula leaves , torn into big pieces
for the caramelized walnuts (akhrot)
2 tsp sugar
5 whole walnuts (akhrot)
To Be Mixed Into A Dressing
1 tbsp olive oil
1 tbsp balsamic vinegar
a pinch of salt

- For the caramelized walnuts
- Combine the sugar with ½ tbsp of water in a non-stick pan and boil for 1 to 2 minutes or till they turn light brown in colour.
- Add the walnuts, mix well and cook for a few seconds. Remove from the flame and keep aside.
