Pina Colada

A delicious tropical mocktail made with fresh coconut milk and pineapple juice blended with oodles of vanilla ice cream. A sweet and creamy mocktail.
Pina Colada recipe - How to make Pina Colada

Makes 8 glasses.
2 large fresh coconuts
3 tbsp powdered sugar
850 gms (1 large can) pineapple juice
5 tbsp pineapple syrup
1 family pack (/2 litre) vanilla ice-cream
For the garnish
2 cherries on a stirrer srick
grated coconut
Method
- Method
- Grate the coconuts. Add 6 teacups of water and allow to stand for a little while. Blend in a liquidiser and strain.
- Add the sugar and put to chill.
- Blend the pineapple juice, pineapple syrup, vanilla ice-cream and the chilled coconut milk in a liquidiser.
- Serve cold garnished with cherries and grated coconut.
- If fresh coconut are not available, you can use frozen coconut cream.
- But, in any event do not used dessicated coconut.
- VARIATION : TROPICAL PINA COLADA : Add 2 dashes of grenadine syrup.

The Pina Colada proved to be a very cool and refreshing drink for the summers. In fact they were so good that the 8 glasses which could be made from the given list of ingredients were sufficient only for me. however the ice cream was too much to use but using all of it added to the tastiness of the drink.
