Polynesian Style Vegetable recipe - How to make Polynesian Style Vegetable

Serves 6.
1 fresh drinking coconut
250 gms boiled mixed vegetables
1 tbsp cornflour
1/2 tsp cumin seeds (jeera)
2 tbsp fried almonds or cashewnuts (kaju)
1 tbsp oil
salt to taste
To be ground into a paste
3 green chillies
1 medium onion
25 mm. piece ginger (adrak)
Method
- Method
- Take out the coconut water and scoop out the meat. Blend both in a liquidiser with the cornflour.
- Heat the oil and fry the cumin seeds for a few seconds. Add the paste and fry for 2 minutes.
- Add the coconut milk mixture and cook for 5 minutes. Add the vegetables and salt and cook for 3 minutes. Add the almonds.
- Fill the coconut shell with the vegetable mixture.
- Serve hot.
