This recipe can be made using leftover rice. One other variation to this recipe is that to add egg in the tadka and then mix it with the cooked rice and saute till eggs are done to make a egg fried rice.

Makes 1 to 2 servings
1 tsp oil
1/2 tsp urad dal (split black lentils)
1/2 tsp chana dal (split bengal gram)
1/2 tsp mustard seeds ( rai / sarson)
4-5 curry leaves (kadi patta)
a pinch of asafoetida (hing)
1 chopped green chillies
salt to taste
1/2 cup chopped onions
2 cups cooked rice
Method
- Method
- Heat the oil in a non-stick pan, fry the chana dal and urad dal till they turn little red in colour without burning them.
- Add the mustard seeds, when they splutter, add curry leaves, asafoetida, green chillies, salt and onions. Fry the onions till they turn translucent.
- Add the cooked rice and mix well.
- Serve hot.
