A very mouth watering potato sabji that can be served as an accompaniment for sambhar rice as well as curd rice

Makes 4 servings
500 gms potatoes , boiled and peeled
1 onion , sliced
1/2 tsp urad dal (split black lentils)
1/2 tsp chana dal (split bengal gram)
6 to 7 garlic (lehsun) cloves , mashed
1/2 tsp mustard seeds ( rai / sarson)
few curry leaves (kadi patta)
salt to taste
1/2 tsp turmeric powder (haldi)
1/2 tsp fennel seeds (saunf) powder
1/2 tsp coriander (dhania) seeds powder
1 tsp chilli powder
1/2 tsp sambhar masala , readily available
chopped coriander (dhania) for garnishing
1 tbsp oil
Method
- Method
- Mash the potatoes in a bowl and add the salt, turmeric powder, coriander seeds powder,fennel seeds powder, chilli powder,sambhar masala, mix well and keep aside.
- Heat the oil in a kadhai and add the mustard seeds.
- When the seeds crackle, add the curry leaves, garlic and saute till garlic turns golden brown.
- Add the urad dal, chana dal and saute till brown, add the onions and saute till translucent.
- Add the potato mixture, sprinkle little water and saute till all the masalas blend well.
- Add the coriander, mix well and serve hot.
