Pumpkin Pasta recipe - How to make Pumpkin Pasta

Makes 4 to 6 servings
1 cup cooked pasta
1 tbsp olive oil
2 tsp cumin seeds (jeera)
1/2 cup roasted and chopped pumpkin
1 cup finely chopped spinach (palak)
1/4 cup roasted and chopped capsicum
1 tsp dried fenugreek leaves (kasuri methi)
salt to taste
1 tsp sugar
1/2 cup milk
2 tbsp roasted almonds (badam) for garnish
Method
- Method
- Heat the oil in a deep non stick pan and add the cumin seeds.
- When the seeds crackle, add the spinach, pumpkin and capsicum and saute for 20 seconds.
- Add the pasta, salt, sugar and milk, mix well and cook for 2 to 4 minutes.
- Serve hot garnished with almonds.
