A delicious and easy to make snack made withleftover rotis and beans. An ideal starter or a tea time snack.

Quesadillas recipe - How to make Quesadillas

Ingredients



Ingredients for the Quesadillas
8 to 10 leftover Rotis
2 cheese cubes, grated
a little oil

For the sauce
1 medium sized onion
100 gms tomato puree
1 tsp garlic (lehsun) paste
1 tsp chilli sauce
1/2 tsp carom seeds (ajwain)
1/2 tsp sugar
salt to taste
1 tsp oil

For the Beans
1 cup chawli (cow pea / lobhia)
1/2 tsp carom seeds (ajwain)
1 tsp chilli sauce
1/2 tsp garlic (lehsun) paste
salt to taste
1 tsp oil

For the Garnishing
1 bunch of spring onions, chopped
some grated processed cheese

Method


To prepare the sauce

    To prepare the sauce
  1. Chop the onions into small pieces.
  2. Heat the oil, add ajwain, cook for a minute.
  3. Add the chopped onions and sauté for a few minutes.
  4. Add the tomato puree, garlic paste, chilli sauce, sugar and salt.
  5. Cook for a few minutes and keep aside to cool.

To prepare the beans

    To prepare the beans
  1. Boil the beans in a pressure cooker.
  2. When done, mash the beans lightly with a spoon.(if there is any excess water – do not drain off , it shall get absorbed in the cooking process)
  3. Heat one teaspoon oil, add ajwain. let cook for a minute.
  4. Add the mashed beans,salt,chilli sauce and the garlic paste.
  5. Cook for a few minutes and keep aside to cool.

To prepare the quesadillas

  1. Take one roti, spread a spoonful of the mashed beans over it pressing down lightly with a spoon.
  2. Next spread some of the prepared sauce on the beans.
  3. Layer with grated cheese, place another roti on this. press down lightly to seal.
  4. Heat a griddle, smear with a little oil.
  5. Place one quesadillas on the hot griddle.
  6. Let cook for a bit, flip over.
  7. Cook the other side, pressing down lightly.
  8. Smear with a little oil. let cook until brown spots appear on both sides. (the melting cheese along with the gentle pressure shall seal the quesadillas together.)
  9. When done, take off the griddle.
  10. Cut into quarters.
  11. Garnish with spring onions and the grated cheese.
  12. Serve hot, accompanied with the prepared sauce.
