Roasted Chilli Corn Salsa recipe - How to make Roasted Chilli Corn Salsa

Makes 5 serving
3/4 cup sweet corn kernels (makai ke dane)
3/4 cup finely diced tomatoes
1/4 cup finely diced red onions
3/4 cup finely diced red capsicum
2 whole red chilies deseeded and finely sliced
2 tbsp fresh lemon juice
2 tbsp chopped fresh coriander (dhania) leaves
salt to taste
1/4 tsp cumin seeds (jeera) powder
1 tsp plain butter
Method
- Method
- Heat a non-stick pan. Roast sliced red chilies on medium heat until it starts to crackle and changes its colour to light brown. Keep aside.
- Melt butter in a non-stick pan. Saute sweet corn for 5 minutes until cooked and tender. Sprinkle ground cumin on top. Cook for another two minutes. Remove from heat.
- Combine cooked corn, tomatoes,onion,bell pepper,roasted red chilies,lemon juice and coriander leaves in a mixing bowl. Mix well. Season with salt. Serve with your papads or assorted chips.
