Delicious and very nutritious soup made with worlds most healthy food peas and tomatoes.

Makes 4 serving
5 large chopped tomatoes
2 cups water
1/2 cup sliced onions
1/2 tsp crushed garlic (lehsun)
2 tbsp ghee or butter
2 tsp coriander (dhania) powder
2 tsp cumin seeds (jeera) powder
1/2 tsp fennel seeds (saunf)
2 bay leaves
1 slit green chilli
400 ml coconut milk
1 1/2 cups green peas
1 tbsp sugar
salt and freshly ground black pepper (kalimirch) powder to taste
1 tbsp chopped mint leaves (phudina)

- Method
- Simmer tomatoes in the water until very tender,then puree in a food processor.
- Heat the butter or ghee in a pan, add the onions and garlic and saute till they turn soft.
- Add the spices, bay leaves and chilli and cook for 1-2 minutes.
- Add coconut milk,mix well, add the the tomato puree, mix well and bring to the boil.
- Add peas, reduce the flame and cook until the peas are tender.
- Season with sugar and pepper and add the mint.
- Serve hot with toasted chapatti brushed with ghee.
