Makes 4 servings
2 cups canned lychee , drained
1/2 cup cream cheese
1/2 tomato , chopped finely
1/2 cucumber , peeled and grated
salt to taste
chilli powder to taste

- Method
- Combine the cream cheese with the tomato and the cucumber and season to taste.
- Refrigerate till the tomatoes are firm.
- Stuff each lychee carefully stuff with a tiny spoon or a butter knife.
- Serve in a fancy platter with sliced tomatoes and olives.
