For The Vegetables
1 cup broccoli , cut into florets
1 cup cauliflower florets
1 cup baby corn , cut into two diagonally
1 cup mushrooms (khumbh) , cut into quaters
1 cup red capscium cubes
1 cup green capsicum cubes
1 cup sliced onions
2 cups coconut milk
2 tsp oil
1 tsp sugar
salt to taste
Other Ingredients
green curry paste
For The Garnish
2 tbsp chopped spring onions
1 tbsp chopped coriander (dhania)
Method
- Method
- Boil each vegetables separately in salt water. Drain and keep aside.
- In a flat pan, heat the oil, add the onions and fry fior a few minutes.
- Put ½ cup green curry paste and cook on a medium flame for 2 minutes.
- Add the coconut milk and 1 cup of water and simmer for 2 minutes.
- Add all the vegetables and stir thoroughly. Add the sugar and salt, mix well and cook on a medium flame for 5 to 7 minutes.
- Garnish with the coriander and spring onions.
- It is always advisable to have a slightly larger quantity of ingredients so as to ensure a trouble-free party.
- All seasonings and vegetables may be added as per your guest's individual preferences.

Good. However, I used ready made Green curry paste to make it fast. Even though I cooked the vegetables separately, I used the same water. If someone wants the crunchy taste, cook for 3 to 4 minutes or 5 minutes if you want it softer. Onions probably fry for 2 min until half cooked before adding the green curry paste. Use only 1/2 cup water instead of 1 if eating immediately otherwise 1 cup. I used the water from boiled vegetables instead of water. sugar can be doubled. Serves atleast 6 people.
