Thai Soup In Coconut Milk recipe - How to make Thai Soup In Coconut Milk

Makes 1 serving
100 gms tomato puree
100 gms coconut milk
30 gms lemon grass
25 gms fresh red chillies
20 ml lemon juice
6 lemon leaves
30 gms sliced carrots
30 gms french beans
30 gms fresh mushrooms (khumbh)
30 gms sliced baby corn
20 gms cauliflower
4 tsp chopped coriander (dhania)
700 ml vegetable stock
Method
- Method
- In a deep pan, add the stock, lemon grass, lemon leaves, red chillies and tomato puree, mix well and bring to boil.
- Strain in a bowl.
- In the same pan, add the coconut milk, lemon juice and all the vegetables and mix well and simmer for 15 minutes.
- Serve hot garnished with coriander.
