A simple recipe to prepare tomato ketchup at home with fresh tomatoes and spices cooked together.

1 kg tomatoes
4 pods cardamom (elaichi)
1 pc cinnamon (dalchini)
1 tsp salt
1 tsp cumin seeds (jeera) powder
15 gms ginger (adrak)
50 gms sugar
4 black peppercorns (kalimirch)
15 gms garlic (lehsun)
10 gms or less chilli powder
1 small onion
100 ml vinegar
Method
- Take fully ripe tomatoes, wash and cut them into pieces and cook for five minutes.
- Chop onion, garlic and ginger and add them to tomatoes along with vinegar and sugar.
- Cook until thick.
- Strain through a wire sieve and store in a sterilised glass bottle.
