Delicious and nutritious soup made with tomato, sweet corn and rice.
Tomato, Sweetcorn and Rice Soup recipe - How to make Tomato, Sweetcorn and Rice Soup
Preparation Time: 5 Mins Cooking Time: 15-20 Mins Total Time:
2 red and ripe tomatoes, finely chopped
4 tbsp long grained rice (basmati)
200 gms sweet corn kernels, boiled
1 tsp butter
1 tbsp concentrated tomato puree
400 ml Vegetable Stock (ready made or made fresh)
salt and black pepper (kalimirch) powder to taste
freshly chopped parsley
grated cheddar cheese or grated parmesan cheese to garnish
Method
- Heat butter in a saucepan.
- Add the rice and saute for a min till rice is slightly transparent.
- Add sweetcorn and tomatoes.
- Add the tomato paste and mix everything well.
- Add the stock and bring to a boil.
- Turn the heat down and simmer the soup for about 12-15 mins till the rice is well cooked.
- Season with pepper and if required with salt.
- Serve and garnish with some grated cheddar or parmesan cheese and parsley.
- And enjoy it warm on a cold winter night.
