Water Melon Curry with Curd

After cutting the red portion of the water melon, the white portion looked like white pumpkin so i thought why not try with this. My mother in law also had the same idea so she told me to try it. After making it we really enjoyed it as it can go with both rice and chappati.

Makes 3 to 4 servings
1 cup chopped watermelon (tarbuj) white
1/2 coconut , grated
3 green chillies
1/2 tsp cumin seeds (jeera)
1/2 tsp mustard seeds ( rai / sarson)
1 tsp jaggery (gur)
1 cup curds (dahi)
salt to taste
a pinch of turmeric powder (haldi)
For The Tempering
2 tsp oil
1/2 tsp mustard seeds ( rai / sarson)
1/4 tsp fenugreek (methi) seeds
1 whole dry kashmiri red chilli
few curry leaves (kadi patta)
Method
- Method
- Heat 1 cup of water in a deep pan and add the water melon whites.
- Cook on a medium flame, till they become soft.
- Remove from the flame and keep aside.
- Combine the coconut, green chilli, cumin seeds and mustard seeds and blend in a mixer till smooth.
- Add this to the cooked watermelon and bring the mixture to boil.
- Add the curds, mix well and cook for a minute.
- Remove from the flame and keep aside.
- For the tempering, heat the oil in a small pan, add the mustard seeds, fenugreek seeds, red chilli and curry leaves and saute till the seeds crackle.
- Add the tempering to the curd curry and mix well.
- Serve warm.
