Wholesome Veggie Soup recipe - How to make Wholesome Veggie Soup

Preparation Time:    Cooking Time:    Total Time:    Makes 2 to 3 servings

Ingredients

2 tbsp soaked red rice
1 tbsp barley (jau)
1/2 tbsp chana dal (split bengal gram)
1/4 cup carrot cubes
1/4 cup chopped broccoli
1/4 cup chopped squash
1/4 cup potato cubes
1/4 cup chopped spring onions
1 tsp cumin seeds (jeera) powder
salt to taste
1/2 tsp grated ginger (adrak)
1/2 tbsp olive oil

Method
    Method
  1. Clean and rinse red rice, barley and channa dal and set aside.
  2. Heat a pressure cooker, add oil.
  3. Once the oil is hot add the spring onions and saute lightly.
  4. Add the ginger-garlic paste followed by all the other ingredients (including rice + barley + channa dal) except salt and cook for a minute.
  5. Add water to cover the veggies and put the lid on.
  6. Cook for 10 minutes or until the vegetables are soft to mash.
  7. After cooking, release the pressure, open the lid and gently mash.
  8. Add salt to taste.
  9. Serve warm.
