Aalu golden fries is a crispy potato based snack. Makes an excellent starter or side dish for sandwiches.

Makes 2 servings
2 medium sized potatoes
1 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1 tsp garam masala
1 tsp cumin seeds (jeera) powder
salt to taste
2 tbsp oil
few curry leaves (kadi patta)
1 tsp lemon juice
Method
- Method
- Peel the potatoes, cut into cubes and cook them.
- Potato cubes should be firm and not overcooked.
- In a deep bowl combine the chilli powder, turmeric powder, garam masala, cumin seeds powder, salt and cooked potato cubes, mix well and marinate for 15 minutes. Keep aside.
- Heat the oil in a non-stick pan, add the marinated potatoes, mix well. Cover and cook for 2 minutes on a slow flame.
- Stir it and cook further for 2 minutes on a slow flame.
- Add the curry leaves and the lemon juice, mix well and cook for a minute.
- Serve hot.
