Aloo Gobi dalia is a vegetable curry recipe with the cauliflower or Gobi fried along with diced aloo or potatoes and then simmered in a curry comprising of tomatoes, sugar and spice powders. Enjoy with rice or rotis.

oil for frying
1/2 kg potatoes
1 cauliflower
a pinch of asafoetida (hing)
1 tsp turmeric powder (haldi)
1 tsp chilli powder
2 tsp cumin seeds (jeera) powder
1 tsp salt
1 tbsp sugar
2 tomatoes
2 to 3 dl water
2 tsp ghee
1 tsp garam masala
Method
- Cut potatoes & cauliflower in cubes/pieces. deepfry all in oil until golden brown. remove all deepfrying oil from the casserole. on medium heat add all spices to the fried potatoes and cauliflower pieces. stir and add 2 tbs ghee. add sugar and chopped tomatoes, as well as 2-3 dl water. let boil on low heat for about 15 min. serve with rice, roti o
