Makes 4 to 6 servings
For The Sponge Cake Ring
1 recipe eggless sponge cake
To Be Mixed Into A Soaking Syrup
100 gms sugar
1 tbsp lemon juice
1 1/2 cups water
1 tsp rum (optional)
For The Filling
2 tbsp mixed nuts
2 scoops vanilla ice-cream
For The Decoration
1 cup whipped cream
a few cherries

- For the sponge cake ring
- Follow the basic recipe, except use a ring mould of 160 mm. (6 1/2") diameter and bake in a preheated oven at 180 degree c (350 degree f) for 35 minutes.
- Turn out and allow to cool.

- Place the sponge ring on a serving dish.
- Saturate it with soaking syrup.
- Pipe the whipped cream around the base.
- Just before serving, fill the centre with the ice-cream. Sprinkle dried fruits on top.
- Garnish with cherries.
