Baked Spinach with Spaghetti

Vibrant green spinach puree and soft white spaghetti look great against each other. Pepped up with chillies and onions and bound by white sauce and oodles of cheese and cream, baked spinach with spaghetti is a rich offering that every diner is sure to relish. Remember to serve it fresh out of the oven, else it will take on an undesirable texture as it cools.
Baked Spinach with Spaghetti recipe - How to make Baked Spinach with Spaghetti

Makes 8 servings
1 cup spinach (palak) purée
2 1/4 cups cooked spaghetti
3/4 cup white sauce
1/2 cup grated processed cheese
2 tbsp fresh cream
1 tbsp olive oil
2 tsp finely chopped green chillies
1/2 cup finely chopped onions
salt and freshly ground black pepper (kalimirch) powder to taste
- Method
- Combine the spaghetti, white sauce, ¼ cup cheese and fresh cream in a bowl and mix well. Keep aside.
- Put the olive oil in a broad non-stick pan, add the green chillies and onions and sauté on a medium flame for 1 minute.
- Add the spinach purée, spaghetti mixture, salt and pepper, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Grease a baking dish, pour the above mixture on it, sprinkle the remaining ¼ cup cheese and bake in a pre-heated oven at 200°c (400°f) for 10 minutes.
- Serve immediately.
