For Bhapa Doi
1 cup condensed milk
1 cup full-fat hung curds (chakka dahi)
1 tbsp cornflour
For The Garnish
cardamom (elaichi) powder

Whisk well till no lumps remain and the mixture turns creamy. You can use a wired whisk or an electric hand blender to whisk this mixture. - 2 1/2 cups cow's milk
- 1 tbsp whisked curds (dahi)
- 2 tbsp sugar
- 1/4 tsp cardamom (elaichi) powder

Method to make healthy bhapa doi.

Combine the milk and sugar in a deep non-stick pan, mix well and boil on a medium flame for 8 to 10 minutes, while stirring occasionally.

Cool slightly for approx. 10 minutes, while stirring occasionally.

Combine the curds and cardamom powder in a deep bowl and whisk well.

Pour the milk-sugar mixture in it and whisk very well.
- Pour the mixture into 8 individual cups or bowls, cover with a lid and keep aside in a warm place for atleast 8 to 10 hours or till set.
- Refrigerate for atleast 1 hour and serve chilled.
