Easy and quick to prepare, you can serve this dish without much ado as it demands no elaborate accompaniment. Just a choice of sauces and maybe a dash of pepper is all it calls for!

Broccoli and Basil Rice recipe - How to make Broccoli and Basil Rice

Preparation Time:    Cooking Time:    Total Time:    Makes 4 servings

Ingredients

1/2 cup blanched broccoli florets
1/4 cup finely chopped basil
3 1/2 cups cooked long grained rice
1 tbsp melted butter
1 tbsp finely chopped garlic (lehsun)
1/4 cup diagonally cut and blanched baby corn
1/4 cup blanched zucchini cubes (unpeeled)
1/2 cup capsicum (red , yellow and green) cubes
2 tsp dry red chilli flakes (paprika)
salt to taste
2 tbsp milk

For The Garnish
1 tbsp grated processed cheese

    Method
  1. Heat the butter in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
  2. Add the baby corn, broccoli, zucchini and capsicum, mix well and cook on a medium flame for 2 minutes.
  3. Add the rice, chilli flakes, salt, milk and basil, mix well and cook on a medium flame for 2 minute, while stirring occasionally.
  4. Serve immediately garnished with cheese.
