Carrot Fritters

Made of grated carrot, crunchy spring onions and capsicums, held together with besan and perked up with a range of spice powders and herbs, Carrot Fritters has a please-all taste and exciting mouth-feel.

Makes 16 fritters
2 cups thickly grated carrot
1/4 cup finely chopped capsicum
1/4 cup finely chopped spring onions
1/4 cup finely chopped coriander (dhania)
2 tbsp finely chopped parsley
2 tsp finely chopped garlic (lehsun)
1/4 cup besan (bengal gram flour)
1 tsp cumin seeds (jeera)
2 tsp dry red chilli flakes (paprika)
salt and freshly ground black pepper (kalimirch) to taste
oil for deep-frying
- Method
- Combine all ingredients in a deep bowl and mix well.
- Divide the mixture into 16 equal portions and shape each portion into a 25 mm. (1’) diameter flat round fritter.
- Heat the oil in a deep non-stick pan and deep-fry the fritters, a few at a time, till they turn golden brown in colour from both the sides. Drain on an absorbent paper.
- Serve immediately.
