Carrot Garlic Chutney

With its sweet flavour and crunchy texture, carrots combine beautifully with garlic resulting in a delightful chutney that has a very garlicky taste. The wonderful work of carrots is further accentuated by the addition of zesty lemon juice and a dash of chilli powder too. It is important to grind this chutney coarsely for the best texture and flavour.

Makes 0.5 cup
1 cup thickly grated carrot
2 tbsp chopped garlic (lehsun)
2 tsp chilli powder
1/4 tsp lemon juice
1 tsp oil
salt to taste

- Method
- Combine all the ingredients along with 2 tbsp of water in a mixer and blend to a coarse chutney.
- Transfer the chutney into an air-tight container, refrigerate use as required.
