Inspired from thai yellow curry. This was a result of finding an alternative for coconut milk but retaining the soft mild and soothing taste it gaves. Good side dish for rotis and rice

Ingredients

2 cups cauliflower florets
1/2 large yellow capsicum , chopped
1 large onion , finely chopped)
1 tsp chopped ginger (adrak)
2 to 3 garlic (lehsun) cloves
1/4 cup chopped coriander (dhania)
4 tbsp fresh cream
2 tbsp oil
1 large green chilli
1 tbsp chilli powder
1 tsp dried oregano

Method
    Method
  1. Heat oil in a pan and add the onion, green chillies, ginger and garlic and saute till onions turn golden brown.
  2. Add the salt to taste, mix well and sauté till the onions are translucent and the raw smell of garlic is gone.
  3. Add the cauliflower and add a pinch of turmeric and let it cook with lid covered.
  4. When the cauliflower is almost cooked, add 1/2 cup water and bring it to boil.
  5. Add fresh cream and stir till well mixed.
  6. Add red chill powder and oregano and bring to boil for about 5 minutes.
  7. Serve hot garnished with coriander.
