Cauliflower Stuffing ( For Parathas)

Cauliflower is one of the best suited stuffing for parathe. The best part is that it cooks quite fast too; you just need to know the right way to prepare it so it won’t get mushy. This particular Cauliflower Stuffing (For Parathas) is extremely flavourful, as it is well supported by green chillies, cumin seeds and coriander. This will lend a wonderful flavour to the parathe, and also help keep them soft and succulent.

Makes 1.75 cups
1 1/2 cups grated cauliflower
2 tsp oil
1/2 tsp cumin seeds (jeera)
1/2 cup finely chopped onions
2 tsp finely chopped green chillies
1 tbsp chopped coriander (dhania)
salt to taste
- Method
- Heat the oil in a broad non-stick pan add the cumin seeds and cook on a medium flame for a few seconds.
- Add the onions, green chillies and sauté on medium flame for 1 to 2 minutes.
- Add the cauliflower and salt, sprinkle a little water, mix well and cook on medium flame for 3 to 4 minutes, while stirring occasionally.
- Add the coriander and mix well.
- Serve hot.
