Through out it is buttery. Cauliflower, cheese, potatoes, mushrooms and others in a short crust base.

Makes 4 to 6 servings
For The Base
1/2 cup plain flour (maida)
1/2 cup whole wheat flour (gehun ka atta)
1/4 cup soft butter
cold water as required
For The Filling
1 cup blanched cauliflower florets
1/4 cup boiled and mashed potato
1/2 cup milk
1/4 cup grated processed cheese
1/4 cup onion paste
1 tbsp green chilli paste
1/4 cup blanched and quartered mushrooms
salt and freshly ground black pepper (kalimirch) powder to taste
2 tbsp chopped pineapple
1/2 tsp cardamom (elaichi) powder
1/2 tsp dried fenugreek leaves (kasuri methi)
2 tsp olive oil
1 tbsp butter
1 tsp cumin seeds (jeera)
For Garnish
grated cheese
basil leaves , finely chopped

- Combine all the ingredients and make soft dough.
- Roll it using flour and arrange it in a pie plate, fork it and blind bake it in a pre heated oven for 15 minutes at 180 degrees.

- Heat oil and butter in a pan and add the cumin seeds, onion paste, green chilli paste and saute for 3 minutes.
- Add the remaining ingredients and mix well.
- Spread the above mixture on a pie crust, top it with grated cheese and bake again for 15 minutes.
- Cut into wedges and serve hot with coffee.
- Garnish it with fresh basil leaves while serving.
