Makes 0.75 cup
For Chai ka Masala
3 tbsp cloves (laung / lavang)
1/4 cup cardamoms (elaichi)
1 1/2 tbsp black peppercorns (kalimirch)
2 sticks cinnamon (dalchini)
1/4 cup dried ginger (soonth) powder
1 tsp nutmeg (jaiphal) powder

- Transfer into a plate and keep aside to cool completely.
- Once cooled, add the dried ginger powder, nutmeg powder and blend in a mixer to a smooth powder.

How to make Chai ka Masala:

To make Chai ka Masala, heat a broad non-stick pan on a medium flame. When the pan is hot enough, add the cloves.

Now, add the cardamom.

Also add the black peppercorns.

Furthermore, add the the cinnamon. You can also add 1/4 tsp of fennel seeds or at this stage if you wish to.

Dry roast on a medium flame for 1 minute. You will get a beautiful aroma when all the spices are roasted to perfection. Make sure you do not burn the spices. Burnt spices will give an awful flavor to the Chai ka Masala.

Transfer the roasted spices immediately to a plate and keep aside to cool completely. You have to be very quick. Keeping the roasted spices on the pan for long will burn them.

After all the spices have cooled down, transfer those to a small mixer jar.

Blend it to a smooth powder. You can skip this step and blend after the addition of all the ingredients. We have blended this Chai ka masala twice to get a really fine powder.

Now, add the dried ginger powder.

Similarly, add the nutmeg powder. You can also add a few strands of saffron (1/4 teaspoon safforn) or dried rose petals for better color and flavour.

Store the Chai ka Masala in an air-tight container and use as required. To make Masala chai using Chai ka Masala, add about 1/4 tsp of this masala( for 1 cup ) to the milk before you boil it. You can store this masala for about 4 months.

I made this recipe today and the measurements are completely off! All you taste in the chai are cloves and cardamom and it tastes bitter!
