A favorite snack or meal option in northern states of india, the delicious chana kulcha has the true punjabi flavours embedded in the spicy chick pea or chole or channa recipe. The channa is paired with special breads called khulchas , pickle and onion.

Makes 4 servings
1 kg kabuli chana (white chick peas)
2 tsp baking soda
3 tsp salt
2 tsp dried mango powder (amchur)
1 tsp chilli powder
2 tsp freshly ground black pepper powder
2 tsp cumin seeds (jeera) powder
2 tsp cloves (laung / lavang) powder
2 tsp dried ginger (adrak)
2 tsp coriander (dhania) powder
2 tsp carom seeds (ajwain) powder
2 tsp cinnamon (dalchini) powder

- Method
- Soak the chick peas in enough water along with baking soda and keep them overnight.
- Drain, add water and boil them on a slow flame for 6- 7 hours.
- Add the salt, dry mango powder, red chilli powder, black pepper powder, cumin seeds powder, powdered cloves, dry ginger, coriander powder, carrom powder and powdered cinnamon and mix well and cook for 2 minutes.
- Serve hot with hot kulchas.
